For those of you who indulged a bit too much over the holiday season but still want to keep a festive spring in your step, check out Chef Shane Osborn’s vegetarian tasting menu at Arcane, available on Mondays in January during dinner service.
Chef Osborn, who was awarded two Michelin stars during his stint at Pied à Terre in London, explains his decision to go meatless on Mondays, saying, ’Clean eating is something that is very important to me, and cutting out meat once in awhile is good for us all. This menu is not catering purely to the vegetarian but also inspires meat eaters with delicious dishes where the vegetable is the hero. I find that all too often the vegetarian is an afterthought for most restaurants and therefore suffers from bland, boring food, which, quite frankly, is not fair.’ We agree wholeheartedly.
Priced at $750 per person, the seven-course tasting menu showcases a bounty of beautiful vegetable dishes, from Crapaudine beetroot with pickled black radish, horseradish Chantilly and wasabi leaves, to poached Taiyouran egg with broccolini, chanterelle and black truffle, to butternut squash ravioli with Swiss chard, sage and almond butter and toasted pumpkin seeds. The individual dishes are also available to order outside the tasting menu at anytime during January.
