Summer doesn't officially kick off until 21 June, but it sure feels like it’s already here in Hong Kong. Bright sunshine and thick humidity are here to stay for the next few months, which means a craving for all things fresh and healthy. With gorgeous beaches just a short drive away, being, well, beach ready is easier with tasty salad options like the new ones from Beef & Liberty.

The beetroot and pomegranate salad ($88) was fresh and tangy and not at all earthy tasting as beetroot can sometimes be. This would be a good meal for getting your iron and folate in, which – bonus – help with muscle recovery after workouts.

The summer salad ($98) is a lighter-tasting option, with fresh peas, watercress, radish, spring onion, goat's cheese and a sherry vinaigrette. Of the two salads, this one was our favourite – we loved the crunch of the radish along with the creamy goat's cheese.

For those looking for a little more indulgence, give the limited-edition soft-shell crab sandwich ($116, available until 10 July 2017) a try. This is Chef Uwe Opocensky’s first seafood creation for Beef & Liberty. The soft-shell crab patty itself was excellent, with large chunks of fresh crab in a tempura-like, aerated beer batter – kind of like a kakiage fritter. It is then topped with a fennel and dill slaw and spring onion and sandwiched between a sriracha-mayo-spread, buttery brioche bun. We felt all this was flavourful enough, but the sandwich also comes with a slice of grilled lime if you’d like yours extra tangy.

For even more indulgence, Beef & Liberty have a new wine programme. Ever been frustrated by the large restaurant markup on your favourite bottle? B&L aim to make your wine experience a happier, more satisfying one by charging a $180 markup on the wholesale price for all bottles. If you're looking for a bottle to pair with the new summer specials, the Chablis 1er Cru comes highly recommended.

Happy summer indulging!
