Thinking of autumn and pumpkin season, my friends who love to bake take out their recipe boxes to rummage through those fingerprint-covered, tried-and-true recipe cards.
Every weekend in October, my friend Jen makes pumpkin bread, pumpkin pie, pumpkin cake, pumpkin cookies or pumpkin jam. Just thinking about them makes my mouth water! One of her favourite recipes is an old-fashioned pumpkin bread. I once watched her make this easy recipe in her home kitchen. Let me share this all-time favourite with you. I guarantee you will immediately fall in love with it!
This bread is so delicious that you should not have any leftovers. However, if you want to save some to enjoy later, the bread freezes well.
Prep time: 10 minutes
Cooking time: 1 hour
Ingredients:
- 1½ cups plain flour
- 1 cup fresh pumpkin purée
- 2 large eggs
- ¾ cup brown sugar
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- ½ tsp ground allspice
- ½ tsp ground cloves
- ½ tsp salt
Method:
- Preheat oven to 180°C.
- Mix all the dry ingredients in a bowl.
- In a separate bowl, mix all the wet ingredients.
- Fold the dry ingredients into the wet ingredients to form a smooth mixture. Add up to 3 tablespoons water if needed.
- Pour the mixture into a greased loaf tin. Bake the bread for about 1 hour, or until a toothpick inserted in the centre comes out clean and dry.
- Cool the bread on a wire rack.
- Serve warm.
